Eating steelies

How good eating are steelies compared to other fish?  I've never fished for them but planning to start.  Best ways to cook or otherwise prepare them?

    Look online for smokin recipes.  The only way to cook them IMHO.  They are very fishy tasting.  Many people do not like eating them at all.

    Hey, I heard there's a place over on the East Side that smokes fish for you. Anyone ever hear of that place?

    on the east side its east side angler on rt 5, capt kirk is the own and him and justin( worker) are very nice guys. very willing to help you. ( i would try the jack daniels flavor it's awsome). and on the west it's poor richards also on rt 5  here my fav is the cajan, they are also very nice group of guys. hope this helps

    Smoke them,remove skin and any thing that does not look meat(fat and the lateral line) if you leave the skin on and cook,the fish will have a stronger flavor,plus you are eating all the crap in the fat.---------pub-------

    Here's my take:   IF you can get a really fresh chromer.   And IF you bleed it right after you catch it.  And IF you can throw it on an ice floe or snow bank till you're done fishing, you can cook it just like a normal trout, just bigger.    Once again, IF you have a nice sized chromer and you clean it very well, and scale it you can cut steaks off of it about 1" thick, cut off the belly  "tails" which have a lot of fat, and cook them in olive oil with a little crushed garlic and sage sauteed in the oil.  Cook about 1 minute on each side AFTER the oil is hot.  Serve with lemon and salt.
           You will notice I have repeatedly stated fresh chromers!  The green slimers caught at Mckean are only good smoked.
         Or you can take a fillet of steel, place it in a large plastic bag with lemon juice, or balsamic vinegar, and salt for about 1-2 hours in the refridgerator.  Then mix up a breading solution of egg, italian bread crumbs (progresso) bread the fish and quick fry the fillets.  They will already be partially cooked from the acid in the marinade, the breading and the oil just firms it up.   These are both just acquired tastes.  Try a little bit before you ruin an entire fish.  Just try a little to see if it's ok.

    This is a receipe from Smokey Joe on North to Alaska that my wife loves.  Tried it with steelhead with the skin removed.  She loved it as well.
     
    Salmon Marinate
     
    ¼ cup Zesty Italian Dressing
    ¼ cup lemon juice
    1 cup Teriyaki marinate
    1 tsp black pepper
    1 Tbsp Worcestershire sauce
    Dried herbs
     
    Marinate for 2 – 3 hours. Put meant side down and grill 10 to 15 minutes. Flip to skin side and grill another 10 to 15 minutes with lemon slices and rosemary on top.

    I HAVE HEARD  PEOPLE SAY FOR YEARS THAT THEY ARE NO GOOD TO EAT. DON'T UNDERSTAND . YOU CAN BUY FARM RAISED STEELHEAD AT THE SUPERMARKET FOR $8.50 A POUND. JUST FILET AND REMOVE SKIN, TRIM OFF BELLY AND BACK FAT,  CUT OUT LATERAL LINE, PUT IN TIN FOIL WITH WHATEVER SEASONINGS, COOK ON GRILL AT LOW FOR 20 MIN.
    I DON'T KEEP MANY FISH BUT WHEN I DO KEEP ONE AND COOK IT FOR MYSELF AND FRIENDS THEY RAVE ABOUT HOW GOOD IT IS.
    ALL THE GUYS WHO REPLY THAT I'M FULL OF SHI... WILL HAVE TO COME TO MY HOUSE FOR DINNER, I LIKE STEELHEAD BETTER THAN WALLEYES. I LET THE LAST 50 GO BECAUSE I DON'T WANT TO DEAL WITH CLEANING FISH WHEN I COULD BE HAVINING A MARTINI GETTING READY FOR THE NEXT MORNING AT THE CREEK.

    Now this is quite tasty
    Very flavorfull indeed
    With regular and cajun to pick from
    Smoking them is thy creed

    Ever make steel head patties? Cook, grill, fry the fillets first, let them cool (you can even throw them in the fridge for a day or two) then flake the meat with a fork. This is a good time to make sure all the bones and dark meat is gone. Add some chopped onions, salt, pepper, finely chopped green or red pepper, some fresh or dried dill (if you like dill, some people don't) and enough mayonnaise to make it a sticky consistency like ground beef. Shape them into patties about 3/8-1/2 inch thick and pan fry until golden brown on each side. I like mine with lots of onions, MMmmmm good. They're not too bad smoked either!

    We smoke them, make good fish cakes, chowder (WCO's had good receipe last week) and the following - quick -easy good tasting:
     
    Marinate fillet in soy sauce (liberal amount) - broil with salt, pepper, garlic (If you like) and real butter - I like dill weed also, but wife doesn't - good either way!

    Like most fish with a high fish content, you can offset the fish by cooking it out of em.  Get a slow cooker, throw a big hunk of steelhead in it with a cut up lemon and a stick or so of butter and some pepper and thyme.  Cook 4-5 hours, take out and chow down to some delicious eats.

    I was skeptical about eating steelheads, but I kept one hen this year that I just threw on the snow after catching, then took for filleting at PR's.  Brought it home, rinsed it off in cold water, then patted dry with paper towels and refrigerated overnight.  It was baked the next day with butter, garlic, salt, pepper, and some white wine.  End result: delicious. 

    Keep in mind, while this maybe wasnt a super-fresh fish, it also wasnt one of the beat-up, spawned out, blackened old war horses.  It was a good, healthy fish...also a rather small fish (around 5.5 lbs), so maybe that had something to do with it.

    Try pickling one. I also smoke a batch about once a year and also like them that way. Fish cakes came out good also.

    Fresh chrome fish hardly taste fishy at all. Fillets can be grilled with just sea salt, pepper, maybe some olive oil, and a squeeze of lemon juice. Just like most other fish. Fish that are darker are not worth keeping. Fish that are turning colors usually go in the smoker or fish cakes. I've had them many ways and they taste just fine and can taste incredible with the right cook. Don't overcook them, they will get tough and not taste good. I've even made Gravlax out of steelhead lately. It's fish cured in salt, pepper, sugar, and dill for 2-3 days then you put paper thin slices on rye bread with butter or cream cheese. Crackers work as well. Any nimrod can cook walleye and perch and not f it up. Steelhead do require a bit more care but overall you're at the very least eating a decent fish that is not 6 weeks old like the ones in the Giant Eagle fish counters. Many will tell you steelhead aren't any good then go buy farm raised salmon which is 10 times worse. Or they don't eat fish at all which is just plain retarded.
