Best way to eat carp?

anyone wanna share their favorite?

someone told me to put the meat in a grinder with some bread crumb and egg and it makes wicked awesome fish patties to fry on the grill or in hot oil..
 
anyone else have some blue ribbon recipes?

    What! No pine board recipes yet! Everyone must still be out fishing or working on thier Honey-do list. Seriously I believe that Wholeys,in the strip district sells carp & they used to give you recipes when you would buy fish there. I knew guys that used to put them in the smoker & claimed if you got them in the spring while the meat was still firm that they were very good.  sam

    Way-way-way back when I was a kid (circa 1965), we lived on second and Holland in Erie. We would catch carp behind Smitty's in the East Slip. My dad would take them to an O'l Russian man that lived down the block from us by the Pixie grille and he would smoke 'em for us. If I remember correctly, they weren't bad at all. I beleive at that time, many small food stores in the area carried smoked carp too.

    I was watching the chopping block on nbc and a gourmet restaurant was serving carp. Could not believe it. They didn't say how it was prepared though.

    Yep, imagine that, eating carp.

    Years ago on the Food Network show Iron Chef, I saw a carp competition of sorts.  They brought out live carp in big tanks and two teams went to work whacking the live carp over the head and slicin' and dicin' and left no part of the carp unused.
    Here's a list of the dishes they made from that episode:

    Absolutely gruesome...

    Can't fillet them as you would other fish? Are the weird pin bones or some other structure in the way?

    I ate a carp once an thought it tasted like largemouth bass...Not bad, but not the greatest either.  I deepfried it in breading.w_w.

    I dunno, I've never cleaned one.  I can't be bothered.  I just like to watch gruesome fish torturing videos. 
    I just prefer torturing and then releasing them myself, to be tortured another day.

    I don't think as many recreational fishermen keep carp for the table as in the past-----not very popular anymore(reason why they're overpopulated sometimes), except in certain areas where there's meat hunters.  Many of the carp that do get harvested end up as plant/animal food.  Food is food.

    Now commercial fishing for carp may be a different story.  Plenty end up at cat food factories and fish markets still I think................................................................................oh, and at paylakes.

    russians love those thing,s they take all you give em and thank you 100 times
    fillet one out when i was young meat looked yellow an smelled like ship head door wonder what andrew zimmer would say maybe [this has a unique texture kind of rubbery kind of slimmy with a strong fish earthy flavor not my favorite fish but definatly a aquired taste for some]just give me the pine board and a beer,beer,beer ,beer,my dinner will be fine

    Carp are delicious!!  Treat them right after you catch them. We never ate River Carp just those from clean lakes and streams.  Keep them alive in a burlap sack till quitting time then bleed them and gut them and ice them down.
    Filet/ skin/ cut out the red meat and GRIND the meat in a grinder.  Do not use a food processor. It does not eliminate the hair bones and the meat turns to paste not fishburger.  Follow your favorite meatball recipe, eggs, onion, parsley, bread crumbs.  Sautee in butter or olive oil till nicely browned. Serve with a spicey tomato sauce {Putanesca} People could not believe the "meat balls" were fish let alone carp.

    looks like me after a dinner my mother in law cooked...she could f up a usda prime grade steak. and she also would not enjoy or try a beer battered walleye fillet because i caught it  but I will bet bet she likes deep fried carp nugetts dipped in a asian style sweet & sour sour sauce.
     
    I will post results of this fish fry in a couple of weeks as I dont know when I can acutully pull it off  and have multiple opinons...non fisherman of course since we all know carp is no good.
