Walleye questions

#1:  When you pull one in from deep water, and release it (undersize) do they have the same problem as smallmouth with the swim bladder.  If so, how do you overcome it so they survive?
 
#2: I read somewhere here you should soak the walleye in milk?  I have been cooking walleye for a long time and never heard of this one.  Any truth to it?

    I don't think walleye have the problem like perch and bass sometimes do, any that I have released have instantly swam away back to the depths.
     
    As for soaking in milk, that's a way to get rid of the fish smell. That's not a problem that I've ever had with walleye, or perch. We always cut the gills and let them in the live well to bleed out before placing them in the cooler. Makes the fillets really white and they taste GREAT!

    Curiosity killed the cat, but for awhile I was a suspect.

    A lot of people soak the walleye filets in milk overnight. I've done both and the milk doesn't do a whole lot IMO but I love walleye so I may be biased.

    They dissappear pretty quick when you realease them. As for the milk (mellows walleye even more - not that you have to).  Dave

    FYI - Cut the gills on Steelhead as well.....makes it alot easier for cleaning.

    mix milk and a raw egg...crush ritz crackers.....dip the fillets in the mix and roll in the ritz...fry in oil.........MMMMMMMMMMMMMMMMMm

    get yourself a good pair of tin snips or wire cutters to bleed em out. Snow white fillets, tremendous!
