Are you kidding me with this video?

I did a search on Youtube on different methods of filleting steelhead and I found this one the most interesting!  These guys gotta be close to WV!  Just listen to the comentary, its priceless!

    He really made a mess of that fish.  What a shame.  I wonder how many others ruin their fish in similar manner?  It seems some one should post a video on the proper way to fillet a fish.

    They could probably find a way to make a bigger mess and a longer process but I'm not sure how! Can't believe I've never thought of doing it that way but maybe that's a good thing. I actually almost thought that maybe they were on to something at the start but they quickly put that to rest. Truely amazing what people will spend time video taping and posting. Can't say that I've ever contemplated doing a video of our fish cleaning operations. Hell, I'm lucky if I occasionally remember to take pictures of the things I'd really like to have memories of. Not sure what commentary is due me for the fact that I watched it twice!

    oh my!

    Well at least they shoot my kind of "trophy" deer. Apparently the adults filming didn't know what they were doing either, all the advice they had was "don't get it on your pants", lol.

    the deer was great, reminds me of cash's "one piece at a time," I thought they were onto something hanging the steelhead up, then i watch it for 12 more seconds, and i realized these dudes are jag offs

    Thanks ShutUpNFish  That Chef was very good.  The one thing I noticed about him was how sharp his knife was.  That is absolutely critical to filleting fish.  The guy in the first video looked like he was using a dull butter knife.
     
    Watching him fillet fish reminded me of making fish head soup.  I wonder if anyone has ever made fish head soup?  Basically what I do is take the backbone and head (minus the gills) and simmer that a little salt added.  When the fish has cooked for about 30 minutes or so, I remove the bones and have a nice fish stock that can be used as a base for soups.  A simple soup would be a broth with just a little green onion, very thinly sliced celery and mushrooms and julienned carrots and simmered for another 30 minutes.  It is quite tasty.
     
    You can also make a more Asian inspired soup starting with the base, some grated fresh ginger, a little crushed garlic, crushed red pepper, soy sauce and topped with a little sesame oil.  Right before serving you can add a few of the canned fried onion rings.

    Bug- Fish head soup, mmmm good.
    Used to make it back in the day(60's) using stripers caught in the surf on L.I.
    Made it Vietnamese style. Very tasty.
    Freaked quite a few people out when they saw those big heads and eye-balls rolling around in that boiling stock.

    Here's how they should look.  Notice how the rib bones are shaved out and not completely cut down into like the baitshops do it.  You should have a nice wide filet with rib meet.  Instead they take the electric knife and cut straight down and cut out all the meat under the rib bones.  For the record these were from last Saturday, already smoked and sent off to friends and family.  Tore up one filet myself in less than 24 hours.

    Nice looking fillets.  A little butter, lemon, salt, pepper and into a baking dish with some white wine....  Bake for about 25 minutes at 350, hmmmmmmmmm.......  Some eats right there....  Dill is also a great addition.  Smoother the fillets with dill weed and let sit in the refrig overnight.  Remove most of the dill before cooking.  Subtle flavor, but quite good.

    Sounds good Bug.  I prefer grilled but will bake a filet now and then.  You really can't beat them when they are fresh run.  Looking forward to some smoked fish dip when I do the next batch.

    Nothing wrong with a grilled steelie...  These fish can be served in a variety of ways.  I have even pan fried them in a little butter with bread crumbs.  I don't think deep frying is the way to go.  I am getting hungry just talking about steelies...
