I don't think walleye have the problem like perch and bass sometimes do, any that I have released have instantly swam away back to the depths.
As for soaking in milk, that's a way to get rid of the fish smell. That's not a problem that I've ever had with walleye, or perch. We always cut the gills and let them in the live well to bleed out before placing them in the cooler. Makes the fillets really white and they taste GREAT!
Curiosity killed the cat, but for awhile I was a suspect.
