Get a load of this beast

Out of Oregon Inlet this past Tuesday it was the smallest (72" 218# dressed) of the four I caught for the day biggest was 400+.  Freight trains with fins.

    There were four of us on the boat so we did a 4 way split, I ended up with about 30# of loin and about 5# of toro.  Toro is the belly meat that the Japs pay upwards of 250.00 a pound for, no fan of sushi but going to try some (toro) seared and dunked in some teriaki/wasabi marinade I got down there.  I tried some steaks last night and they weren't bad, not quite as good as yellowfin but I've had worse.

    About 30 minutes on average, we were using 80 and 130 wide shimanos and penns with 50 to 70# of drag and 130# mono/dacron.  I had some jigging gear but the fish would have just tore it up, they were pulling 400+ yards of line at 50# of drag in about a minute when they hit.  My best reel had 500 yds. of 80# braid and the reel could only put out 35 or 40# on full setting, didn't want to watch 100+ dollars worth of braid melt off the reel and break at the knot.  Insane fishing..can't wait to go back next year.

    after the marinade, coat it in toasted sesame seeds. then sear it on a HOT grill. YUM

    Saw that last year and tried it-GREAT




    Chimney Tuna Loin Recipe courtesy Alton Brown Prep Time:
    10 minInactive Prep Time:--Cook Time:3 min Level:Easy Serves:4 servings
    Ingredients
      1/2 cup dark soy sauce1/2 cup honey1/4 cup dry wasabi powder2 pounds tuna loin, cut into 2 pieces1/2 cup sesame seeds2 tablespoons peanut oil
    Directions In a non-reactive bowl combine soy, honey, and wasabi powder.
    Reserve 1/4 cup for dipping sauce.
    Roll each piece of tuna in this mixture to coat evenly.
    Marinate from 1 hour to overnight.
    Remove the tuna from the marinade and discard the marinade. On a plate, lay the sesame seeds.
    Roll the tuna in the seeds to evenly coat. Fire up the chimney and top with a well-oiled grate.
    Sear for 15 to 30 seconds per side or to desired temperature.
    Remove to rack and rest for 3 minutes. Cover with foil or plastic wrap to achieve carry over cooking.
    Slice thinly and serve with the dipping sauce.

    If you've never caught bluefins all I can say is you'll be amazed with the power of these creatures, all of the fish I caught were on 80W and 130's.  I had an accurate/rainshadow combo with me but just couldn't bring myself to let them trash it.  Lots of luck to you, you'll get em if the weather allows you get out there and it looks do-able at this time.
