Can't help ya on the how to's and why's, but I know that some are epoxied to the inside of the hull and some you have to drill through and epoxy in. I'm not a big fan of drilling holes in the bottom of my boat.
I will say that I get good readings on my transom mount up to about 20 mph, it will read depth accurately above that but won't pick up much else. Just be sure to properly locate it and you shouldn't have any issues.
