Well ur Sage is a good rod...it will work well for steelhead/trout fishing in larger bodies of water.

Not a bad rod in my opinion, I like the fact it has REC double foots on it, personally...this would be a good dry fly rod in smaller bodies of water being that it's so light.
The Orvis is kind of an Oddball for you...8'3" 7 WT....not too common of a rod....
I would reserve this rod for when you need to steelhead fish in tight quarters, in example, if you ever fish raccoon or crooked creek....but Whorvis, as bad as I hate to say it, does make a good stick...their quality sometime does not coincide with their price tag though.
As far as your reel goes, the Battenkill Large Arbor V is an excellent reel for steelhead fishing. It has a large arbor, so that increase in geometry will allow you to crank in line faster than say a mid or regular arbor reel....
I'd say with this stuff you are set up for about any trout or steelhead situation, all you have to do is put it to use.
