    Turn your oil temp down a little, walleye fillets are so thick that sometimes the outside will be over done by the time the center is cooked. Looks good though...

    Little over cooked I will agree, I want to get a new batter.. This one is ok but nothing great.. The hot sauce was used trust me !

    I think the "worm" comment was a reference to another poster from a while back who seems to have mistaken the veins in the flesh for worms.

    Get yourself a frying thermometer.  Like $5 at Wallyworld or other.  They have temp ranges for all sorts of food.  Taters are much higher than fish.
