Smoke & Batter

Hey guys, I got a free fish smoker today. I have a general idea how it works....but would appreciate any tips to help me over the trial and error curve.


Also.....I'm looking for a super basic breading recipe (not for the smoker)

    If yer fryin' it is tough find a simpler, tastier, homemade breading than flour with some salt, pepper, and garlic powder mixed in.  Anymore I buy boxes of Shore Lunch breading, which is also purdy easy.

    shore lunch corn meal breading. good, and real crunchy.

    Try Zarians ( spelling ). I had it up in Cleveland on deep fried chicken and fish. Both were awesome. You can but it at Sams Club there. Havent had a chance to see if our Sams has it here.

    Put flour and spices in a bag or container and shake to give a light coating
    Dredge in egg and milk mixture
    Dredge in panko
    Fry in corn, canola or other vegetable oil.
    Peanut oil can add too much of its own flavor.

    For smoker sprinkle with old bay on both sides and put back in fridge for at least 1/2 hr
    Place on rack in smoker with medium heat til done to your liking.
    Fish can go from almost done, moist and flavorful to resembling charcoal in about a half hour

    Figuring time and temp can be an art but I try to keep temp under 180
    For thick pieces I stay around 150-160

    I think you mean Zatarains... comes in a yellow box. I use it for walleye and love it. I just add some extra pepper and garlic powder.

    Thanks guys. I've never cooked fish b4. The wife is beatn me up to get r done.

    Anybody know where I can get cheap golf clubs?

    Just used some Hook and Cook Coconut breading in a beer batter on some walleye -- even with a pre-dip it didn't adhere as well as I would have liked, but enough stuck to make a pretty tasty meal.

    Penko is hard to beat Slick....I simply season my fish with black pepper and Lowrey's, if you want a lil' kick add some Morson's Hot Salt. Dip fish chunks/perch into flower (preferrably Wondra) then egg/milk mixture then in Penko and fry in hot peanut oil. PERFECT everytime!

    Try House Autry Seafood Breader and/or crushed Cornflakes (beat in blender or food processor)! I usually use some of each and shake in a plastic bag! Add pepper and/or garlic powder if you like! Use Olive Oil or Canola!
