Venison Steak Recipes Needed

While wrapping up venision from the processor yesterday I noiticed that they error and included a dozen round steaks -- I typically just keep the fillets and have the rest ground for my father.
 
I have no idea what to do with them.
 
If anyone has some good recipes, it would be greatly appreciated.  FYI -- my wife is not too wild about onions, so anything that has the steaks smothered in sauted onions probably won't fly in my household.

    Seperate the individual muscles to make smaller pieces.

    In between plastic wrap, beat the snot out of them with a meat tenderizer till really thin.

    Season with salt and pepper, dip in egg wash then flour/corn meal of equal parts.  Pan fry in real butter and serve with buttered egg noodles.

    If they are deboned, like dpms says, a little season salt, worchestershire sause and broil, 5 minutes, flip and 4 minutes. Dont overcook as they will still cook after you remove them from the heat. Time will vary a little as to the thickness of the cut. Great for the chops also , just cut the heat time down a little. Another good way is swiss steak style.On top the stove, some water in the skillet, can of tomato paste [ a little onion dont hurt her]and simmer for about 1.5 to 2 hours. Just check so the water doesnt boil out and move them around a little so they dont stick......WF

    This is my favorite venison recipe. I found it on foodnetwork.com.

    I stray from this recipe slightly. Any larger piece of venison that you can pound thin will work. The size mentioned in the recipe is hard to work with so I go with larger pieces. I also wrap the crab and asparagus with the vension and close it with string, otherwise the crab likes to find its way out of the venison. I serve it with hollandaise sauce spooned over it.

    8 servings. Ingredients
    •1/8 cup olive oil
    •2 pounds sliced venison top round, cut into 2-ounce portions and pounded thin
    •Salt and freshly ground black pepper
    •16 asparagus spears, tips only
    •4 tablespoons mayonnaise
    •3 egg yolks
    •2 teaspoons freshly squeezed lemon juice
    •2 teaspoons crab boil seasoning (recommended: Old Bay)
    •1/2 pound jumbo lump crabmeat
    Directions
    Preheat oven to 350 degrees F.


    Heat olive oil in a skillet. Season venison with salt and pepper and sear both sides lightly. Arrange on a baking sheet.

    Have a bowl of ice water handy. Blanch or steam asparagus tips until tender and shock cool in ice water.

    Combine mayonnaise, egg yolks, lemon juice, and crab boil seasoning in a bowl and mix well. Stir in lump crabmeat, trying to avoid breaking up lumps. Spoon crab mixture onto each venison cutlet and place 2 asparagus tips criss-crossed on top. Bake in oven until crab is light golden brown.

    Real simple recipe is to buy one of the McCormick bag and seasoning swiss steak mixes. You beat the heck out of your steak, stab it with fork too if you want, then follow the recipe on the package. Substitute stewed tomatoes for tomato juice and cut the water down a little, to get a thicker gravy, and serve with mashed potatoes. You find those seasoning packages with the bag and everything right next to the seasoning packs for brown gravy, au jus, etc.

    Usually we just beat, marinade and grill though.

    Another recipe that we use for venison roast, but would work for a few steaks in the crock pot is this:
    1/4 cup red wine
    1/4 cup ketchup
    1 cup water
    tablespoon mustard
    tablespoon worchestichire sauce
    1 pack au jus gravy mix.
    whisk together above ingredients in bottom of crock pot. Add meat and cook on high 2 hours, on low 4-7, until meat pulls apart with fork. With steaks I imagine it would take on the lower end of that time range. We add onions from the beginning, but you don't have to. If you want to do carrots or potatoes in with the meat, add them 4 hours before your end time for the root vegies to be completely cooked. This recipe is nice because it only takes 30 minutes to prepare, then the crockpot d oes all the work. The gravy tastes good too.

    I'll get my dad's recipe for venison hash for breakfast when I talk with him next.

    in pan on stove...butter... onions...deboned meat, when meat is cooked add a can of potatos...laugh all you want guys...its the best!

    Marinate in a mix of soy sauce, oil, honey, brown sugar, ginger, and fresh minced garlic for about 8 hours.  Grill to medium rare on the outside grill.
     
    I don't measure the ingredients, but if I had to guess:
    2 cups of soy sauce
    3 tablespoons of oil
    1/8 cup of honey 
    1/8 cup brown sugar
    1/2 teaspoon of ginger
    3 cloves of garlic
     
    Pretty much my standard, go-to marinade for any wild game.

    Fry in butter with onions

    Marinate in Italian dressing then grill or fry

    Soak in Boone's Farm apple wine or country cwencher for a half hour then grill or fry

    A half inch thick steak only needs about 3 min on each side

    A simple way to mix it up from the norm. is to marinade your steaks in a marinade of choice...
    I like a lime / citrus based marinade for mexican dishes, but rsquareds' sounds pretty good too.

    After 12-24 hours slice steaks into small strips & sear in a cast iron skillet. Not too long.
    Add 1/2 pack of taco seasoning as the steak's finishing up.
    Place meat in taco or burrito shells & add favorite toppings.
    *I use sour cream, cheese, a little lettuce, diced tomato, a few jalapeño rings, & a spoon of salsa.

    One final step to really send these outta the park:
    I used the soft shell tortillas,
    wrap up & place on the george foreman grill for 3-4 minutes just to melt cheese & lightly toast the outside.

    BOOM!
    Homemade, venison, grilled-stuffed burritos.

    Slice them a bit and put slices of garlic in them.
    Give them a roll in soy sauce
    Sprinkle a little bit on Montreal steak seasoning on them
    Sprinkle some Liptons French Onion Soup Mix straight from the pouch onto them
    Leave them sit for a few days in the fridge


    or use the Con Yeager Burgundy Wine marinade

    great receipe...1/2 cup olive oil.....cup soy sauce to cover steaks...montreal steak seaoning..marinade over night...the best...grill the chops or steaks..
