I fished Oak Orchard for many years.  Your rig is okay. Try florocarbon tippet, the water is clear.  Small eggs, sucker spawn, and nymphs.  I used big nymphs on the salmon.

Your steelhead rig will work fine up there- as dbd said use some flouro tippet. I go every year and either fish an 8wt fly rod w/ 4x leader; or a 10' noodle rod with 9lb tectan mono.  Usually I use 7lb grand max for tippet- expensive but strong and small diameter. You can use a variety of flies. I caught browns, cohos, steelhead, and chinook on ss, wooly buggers, and small jigs (1/64, 1/32). We were targeting Cohos, but there were lots of browns and not very selective.

When me and Crappiefisher went to the Oak in N.Y. this year, I took a 7/8 weight. I got spooled by a King. I bought a 9 weight for next year.
