For lake trout you want to find an area that has a sharp drop off . it is preferred to have a shallow bay close by as the lake trout will herd bait fish up to the shallows. As for depth, again sharp drop of 50>150 feet.
Tackle:
You need good traps that can hold plenty of line. Use a 4' mono leader of 10# test a med #5 or 7 split shot and #6 bait or circle
hook.
Bait:
my 1st choice, Med suckers. 2nd, med shiners. 3rd, large emeralds.
I always stager my rigs, example: 1st rig, 3' off bottom. 2nd rig: 25' down and so on from there. If you wish to target salmon then fish shiners or emeralds 10>15' under the ice.
Lake George is better jigging (for lakers) then any other lake I have found.
Jig a #5 pearl Swedish pimple or white buck tail tipped with minnow. drop to bottom and jig for about 5 min. then move up about 6' and continue on until surface. Move often .
