Between a sz 4 and 2/0 gamakatsu octopus circle for channels. 5/0-8/0 octopus or 8/0-10/0 octopus circle for flatheads. Hook size is determined by bait size, hence the wide range.

Same here... hook size is dependent on bait size.

Had good luck on 2-8lb channels using these:  http://lazertrokar.com/products/octopus  Sorry for the spinning hook... I hate their site.  Anyway, 1/0 and 2/0 with cut baits.  Last trip I tied on a couple wide gap gamakatsus from my saltwater kit and they worked pretty much the same.

I primarily use Gamakatsu circle and octopus hooks.  1/0 for smaller cats and up to 7/0 for bigger ones.  I picked up a package of Gamakatsu Big River Bait hooks last year, they have more of a j-hook shape to them, I like them for use with larger pieces of cut bait.

Gamakatsu circles all the way.  Size depends but I like to use fairly large hooks to discourage bullheads and other bait stealers.

Always try to use circle hooks, period.
