I like pike the bigger the better,fillet Y bones out ,dip in egg wash breading and fry,nice flakey white mild fish,compare to walleye when done right, My family loves my pike patties,boil fillets till they flake,drain flake in a bowl,( small diced) sweet red bell pepper,sweet or green onions,a little celery in a frying pan with a little olive oil and butter,cook veggies on low heat till soft,mix with flake fish and add a couple of beaten eggs, and old bay seasoning mix together and add some seasoned bread crumbs,till it binds and you can form a patty that hold together. Then dip the patty in egg wash and dip in breading and pan fry till golden brown on both sides(one flip). Serve with seafood sauce it like a really good cake cake without tons of bread filler.
