How they taste these Salmon river fish?
Are they fishy ? Do they taste best smoked like I seen them served on the cooking channel?

Can Salmon river salmon be pickled or are they best hickory smoked and sliced real thin and served like they do in those fancy restaurants?

I have never eaten them myself, but friends smoke them grill them one of my buddys covers them in breadcrumbs and pan fries them.

The farther they get upstream and the closer to spawn the worse they taste. The meat almost starts to change texture. They start rotting after a while and then it is game off for eating. Thats why folks smoke them to hide the stronger taste.

Yes , that I remember from a friend who tried them a wee too late in the season. I remember camping at selkirk when it was a primative campground in the late 70s and grilled a fresh snagged one off the pier.. it was a cahoe about 10lbs. and i grilled it over an open campfire there and it was pretty darn good eats. But another time, I did try cooking a few king fillets a few seasons later and learned as you say,, they can taste like fish mud! lol Any remember the meat deli market back then, they use to serve fried bluefish tarter on a long roll and a basket of potato fries on their lunch specials, those were the days anyone could fish anything anywhere..even at night. Do they still have a smokehouse in town for visitors catch?

That's cool. But I doubt I'll lucky enough to get up before those fresh Cohoe salmon. I am guessing those would taste better smoked than the king Chinook from the river.

As Clint says, the longer they are in the river, the worse they will be. They stop feeding as the digestive tract shrinks ot create space in the cavity for the developing gonads,and they keep themselves going by using the "goodness" stored in the muscle. Ones that have been in for a while start looking like they have shrunk slightly inside their skin. I made the mistake of keeping an old one many years ago, and watched each section of the fillet seperate as I came down the skin with the knife. That went into the trash! If you want one for food, go quickly now, as the darker they get, the gamier and the softer the flesh gets. Or, go up in the spring, take a charter, and get some bright ones. Then you can smoke, bake, broil, pickle, etc. I don't think salmon fries well, as it has so much oil. And I won't get into the contaminant issue, as I can't type well enough! L13

Lucky, I kinda knew that about the stinky old king salmon. It has been so long though and was curious how many are stringing them. I remember wetting my line tying a knot after a break off in the blackhole,, some fisherman next to me seen me and warned me about the bacteria from the water treatment facility just upstream.. said to me it is not a good idea to wet a line with your mouth in the SR. I also know all about the consumption advisories for the states fish. I C&R over 90% so I can not let it bother me at my age. But just in case by some chance of catching a coho , aren't they better eats than king? tia & for the reply

Might be a bit off here with modern knowledge- but I always believed most of the toxins are stored in the fat. I never steak a salmon or leave the skin on. -always figured if those fatty areas were removed a fillet was somewhat safer. Not that I keep them any more anyhoo. BTW- thats why I dont diet and loose weight-figure if all the bad thingies stored in my fat get released too quick I might kill myself.

RG is correct about higher concentrations in the fat of the fish, and the recommendation is to remove all belly fat, the skin and the lateral line, and cook the remaining fish by a method that gets rid of the fat (Grill, smoke, bake or broil on a rack so the fat drips off the fish) My total kill of these salmon consists of maybe 10 kings , most of which I gave to people who asked for them, and a few browns and steelhead, again for folks who wanted a fish. I only ever ate a coho caught off the piers in the spring (OK, but these fish eat alewives, and we don't), and I very quickly realized that if someone wanted a king, they would need to come down to the river and get it there, as I was done hauling out 60 lbs of fish on a stringer! watch out for the guys that are trying to buy your fish it is against the law and i wouldnt doubt that dec would put some up to it. If they want one all i ask from them is a thank you and nothing more. One more thing I talked to a guy who fished under the bridge and said he got yelled at by Dawn for casting into her water she said she owned the water and that he couldnt cast over there so I guess the fish that swim through her water are hers so look out she will be calling the police on you

Do you think the conservation officers have to fill a quota and find a reason to ticket outsiders or are they all pretty good guys? I heard strange stories in the past that they do try to set up or bait ignorant visitors. But, I never had a problem with DEC officers watching over for rule violators. They should do undercover up there to catch the trouble makers, that must be fun watching them catch the morons who instigate trouble. lol , hey If I'm lucky to visit the SR this season, I will certainly review the special salmon river fishing regulations. I like to fish in peace away from crowds and do not like to trespass and certainly avoid any confrontations up there.

Knots- Wait until October and fish for steel and browns. It will still be crowded, but not the mayhem, you will encounter during salmon. Ssg- I gave the fish to people back home, no sales involved. As to the water, you can cast where you want just can't be on her bottom (Bad Pun LOL!). The water belongs to the people of the State of New York! L13

13 your on the mark with, you want them, come catch em'.. I did enjoy my first smoked cheese & cracker Ho last year in like 20 some ? Steelhead , man 30 ? Been so long,, Maybe it's time to try .. 1980 I ate any fair game that swam, flew or walked .. Sometimes outta necessity and grew a fondness for certain tastes over the years.. We stock on Venison ..mmmmm Red flesh fish are really not one except a shore dinner of brookies now & then.. I LOVE catching trout/salmon.. Heck anything that swims.. So I target my species based on C&R.. .. Tough to do but thankfully grazers freeze well and turf (pannies) are fresh pick.. If you like it " Eat it " thats what it's there for and use the above helpful care tips..

I love Pacific salmon,from the ocean not lake O.Buy fresh caught never frozen at Wegmans,Coho and Sockeye the Kings are $23/lb,and there is a world of difference between the fish from the salt and those from the lake.I don't keep anything up there anymore,not worth it to me,not even the trout.

tuna man, one time I had a steelie frozen like a block of ice at some meat butcher place over the town pool in the early 80s.. thought it was fine to broil in the oven home in jersey.. boy was that a mistake.. the smell was merciless and I never care to smell a bake like that ever again Sometimes a fish can smell too strong depending on what they eat I guess. Even fresh gutted browns can release a tremendous oily smell from lakes that have oily forage like alewives. But for up there, the old saying," eat fish, live longer" probably not a good idea. pa, i caught steelhead fresh out in washington state from the pacific and they were excellent pan fillets much better tasting than freshwater steelhead.

Was LE for over 28 years - used to hear that 'quota' carp all the time. NADA Think it comes from people who get caught and gotta make an excuse why it really wasnt their fault- hadda be because of somebody else -right ?? Hey= its called personal RESPONSIBILITY and it left lotsa folks a generation or two ago. Now somebodys gonna chime in with the old 'well I knew a guy' =---dont bother- its older than you are.. Just fish forem like they are fish and -no problemo That oughta lite some fires--lol Truf hurts.

RG- We have a ton of red light cameras down here in RACHACHA, and it is a real laugh to read the letters to the editor from the suburbanites who B**** because they just got their picture in the mail with a bill for $50. As you say, it is easy, toe the line and no problems. Encon in Pulaski is a hard working bunch of people who are putting up with some of the biggest low life's in the guise of sportsmen on the East Coast, mixed in with some legit anglers, and they do a pretty good job of "cutting the herd" without bias. They get little to no support from a lot of the JP's, and there are not enough of them to really put a dent in the barbarism that passes as fishing during salmon (and this used to persist through Steelhead as well), but they do try hard. And they are there working undercover as well, but if someone doesn't see them, well, the camo is improving! L13 the

i can't cook a fish to save my life...don't know why, i do fine with everything else....but, i put a couple in the smoker every year after soaking them in teryaki over night, some hickory chips and they are awesome i try not to eat too much of it because of the contaminants in the lakes btw i've had erie steel straight from the stream to the grill with alittle oil and garlic salt and they were awesome too but 99% of what i catch goes back just fun :)

i have a special rotisserie ovan set to 1550 degrees or so. no need to worry about contaminents after an hour in there. a little well done but nontoxic.

I think I was smelling something metallic but fishy at the same time.. DO NOT EVER want to smell that oven baked industrial toxin ever again. lol TB,when you incinerate your fish, do you see any metals rolling around at the bottom of the pan ? this aluminum melts 1218 degrees F copper 1981 iron 2300! lead 620 mercury -37.81?... mercury boiling point 674.11?.. mercury is a liquid metal at room temperture. ..okay got to go to work, later people

i have lived here a long time and in 25 years my total salmon fishing has been 4 days. two this year and two last year. i have caught a few by mistake but you don't learn much that way. just a poor old stumble bum trying to learn from those with much more time on the water than me. which is just about everyone.
