Dammm, how do you even know what your eating. I fry mine plain or with mushrooms and eat plain or with a little ketchup. I like my deer to taste like deer and my walleye or perch, etc, to taste like fish.

Heavy, itchy, but the only clothes that could get wet and still keep you warm. A set of those and a pair of the red foam booties to wear with your goloshes (sp) and you were hi-tech for the age. Of course most readers were not even born then. I parked them the same time I retired my 25-20 rifle.

It's more about the texture than the taste.  And it does still taste like deer.  Sort of.

When I do steaks I do the pan fry thing.  Sort of.  I heat a half stick of butter and 2.5 shots of bourbon in a skillet until the butter is melted and then add the sliced muchrooms and slivered onions.  After the onions start to soften, I remove the mushrooms and onions and add the steak.  A quick color change on each side and I pour all the liquid off into the mushrooms/onion.  Heat the steak through, remove and replace in the skillet with the mushrooms/onions and liquid.  Add a little flour and cold water mixture to thicken and readd the steak for a minute on each side.  Done.

Always saved the loins, best meat on a deer.

Slice them about a half inch thick, flour bath, egg bath, roll in crushed up Townhouse crackers.
Pan fry with butter. MMMMMMMMMMM.

Had a set of those old woolrichs gave them up 25 years ago when they came out with material that didn't absorb water like a sponge. Hunting in the rain was horrible, you gained 30 lbs.

Favorite for chops or steaks, a few dashes of worchestershire sauce, let stand for half hour and broil 3to 4 min per side depending on thickness. Get it as close to the heat as possible...WF
