Steelhead filets at Costco

I was at the Costo at the Waterfront in Da Berg today and they had fresh farm raised steelhead filets.
The meat was a bright red with a little bit of an orange shade on some-look like salmon.
Is this a normal color or does it depend on diet?
All that I have cought had almost white flesh.
I did not buy any because I was not headed home anytime soon.

Hey marty,  i was at a store that had farm raised palomino(golden trout, they called it) trout, it was the same way. I asked a seafood salesman about it, he said they can dye the flesh. I trust the guy because he sells seafood to my restaurant in mt. lebanon.

In many instances food coloring is used to make the fillets more attractive.  It is a common practice with salmon.

I would understand if it was a packed fish-cryovac or frozen but this was fresh.

I dont think the store itself does this. I believe it is in processing, and shipped that way. Thats how the trout were that i saw, fresh in the case on ice.

farm raised steelhead and salmon are fed pellets of food which contain chemicals that make the flesh red, orange, or pink. the effect of these chemicals on humans is under debate. most dieticians advise against their use and consumption. so, chose between those additives and the advisories concerning great lakes fish consumption. or, just have a hamburger or steak from a cow on steeroids. or, skip dinner and have a martini made with triple filtered russian vodka.     cheers,   glen

In most cases the additives for fish pellets to enhance the color of the flesh are the same compounds that cause the same coloring of wild fish and non-toxic. This information was passed on to me by a fisheries biologist from Maine.

Eat Wild Caught American fish...always...spend a couple extra bucks and eat something that is actually healthy for you and that supports American fisherman who follow international law and sustainable fisheries management practices.  That goes for shrimp and shellfish too.

There is no taste thats why you need to use lots of seasoning
Wild local shrimp are the best for a shrimp coctail!

Every Steelhead that I've ever cleaned has had red meat.

My wife insists that it isn't trout but salmon because when I go out and catch
local hatchery trout, the meat is white.

Perhaps I am just remembering them differently.
I don't remember what I did last week let alone last November.
Guess I will need to come MUP to refresh my memory.
I allways have Poor Richards filet the few fish I keep
If I keep 3- 1 is fileted other 2 are traded for cajun smoked

Oh man Flash, it's the same in my house.  My wife tells everyone about the salmon i bring back.  I tell her that they are stealhead trout but she insists its salmon by the color.  They are all pink fleshed UNLESS you catch one of those beatup boot looking things.  I decided to keep one a few years ago and the flesh was white and it tasted pretty good but they look so awful.
