Anyone have some good recipe's for spring run Suckers.  I've heard them called "poor mans salmon."   How do you fix them?   Fried?   Pickled?  Canned?  whatever...

I'm liking the recipe he uses for deep frying the fillet of a sucker.  Says the small bones will cook but, advises caution with feeding children.  I think eating fish anytime requires a bit of caution even if it's ground for cakes.  Anyway, I've attended a lot of benefit smelt fry's in my day and they are fried up and consumed with fins and tails intact along with ones favorite beverage, of course.
