ALL walleye should be C&R.  Released into hot oil with a nice beer batter.  
 
1c      AP flour
12oz   beer  (I use miller lite, don't use dark or fancy beer)
1       egg, beaten
1t      kosher salt
pinch of pepper and garlic powder
 
If you are looking for a nice thin and crispy beer batter, there you go.  Perfect for those walleye!
