Saltwater sheep seem to be better table fare than freshwater sheep.  I've never had it, but when I'm in Mississippi fishing the Gulf, I see them go on stringers and in live wells quite often.  A couple in-shore charters whose fishing reports I read in advance of my almost yearly trips down there actually target them for their clients from time to time, especially in the fall and winter when other, more sought-after species are less predictable.

Most saltwater fish seem to be better than their freshwater cousins, to my taste buds at least.  Although, I do prefer yellow perch to the "ocean perch" they sell at the grocery store, and to most fish for that matter.  Also, to note, sheepshead in Erie is just a slang term for them.  There is a saltwater fish called sheepshead that is supposed to be very good eating as well, strange (human like) looking teeth on them...  I don't think either of the "sheepshead" are winning any beauty contests, where those bull reds are a great looking fish.  Lose a little of their natural beauty hanging from a spike, but a pretty cool pic in a little morbid way!  Especially how they hung those black tips...  I also hear they are good on the grill too, but might want to keep them from the kids.  Not sure about black tip, but most sharks are high in mercury.

Salt water sheepshead are delicious. Very common in SW FL (where my parents live)too. With those little teeth, they're excellent bait stealers. I've caught them in 70fow and 7" of water. Half a shrimp on a small circle hook or you'll get robbed every time.

I did the poor mans shrimp,one time back in the lake Erie pre- zebrera mussle days,we got a quick two man ticket as always and where back at the nut 9 ish am. We caught a couple of really big sheepies, I filleted the back (loin) meat and cut into shrimp size strips, drop in boiling water 1 min,then into ice water. I added a generous amout of Old Bay seafood seasoning to the boiling water. they weren't bad but never did it again.

Gotta love freshwater redfish. Don't know why they get such a bad rep, I'd rather catch a lot of them than a couple walleye any day. And on Erie it sometimes gets boring reeling up the lifeless perch all the time, the sheepies change it up a bit and actually put up a fight.
 

 

 
Fished out in Central PA the past 5 days.  It was nice to fish some real trout streams.  Stockies are ok though, but there's nothing like wild trout.

I'd love to see more "catch and release only" streams in nwpa. Wild trout are so much more fun and challenging that I wish there were more opportunites within an hr or 2 drive

That's cool Jeb.........Trout Guy nice photo mix as always. Been a slow bite for me after the local Muskies we caught. No big numbers or size fish for awhile.
