I'm the one who started that whole white line thing. I stand by it still. A white line on the back of a fish looks fayke to me.

Skin it first and cut out the area around the lateral line then send that puppy to the smoker. You will be surprised at how well it does.

I gave that duud 100 lbs of that sheet....him and his brothers ate it in a weekend.....he's asked me for more....I won't even gut em.

carp are awesome to eat...
very mild meat, great for making fish patties..
and EXPENSIVE!
Head down to Erie County Farms and go look how much a whole carp costs... lol You won't believe it..
good smoked too..
