Are the white perch good to eat ? I heard they are pretty oily ! Caught them before but always let them go. The charter captain said they were no good ?

I don't know how they taste. I do know they seemed way smaller than the yellow perch. I sure don't wanna filet those dinks.

I think they are the same species of white perch in the Chesapeake Bay, which are very good eating.  Usually too small to get any meat from, but if they get over 10", well worth filleting.  They are a cousin of the white bass & striper, which are both good table fare.  None are as good as yellow perch IMO, but I haven't found any fresh water fish that are.

They may have a red blood line on their flesh when you fillet, remove this portion of the meat, or you will swear that they are not meant for the table.

Fresh strippers are tasty!  Used to eat them often back during the '60's when I was in the Coast Guard stationed in the New London, Conn. area.

I've never tried white perch.  Chautauqua lake is crammed full of them and many are good sized.   Couple friends of mine eat them and say they are pretty good when eaten fresh, but do not keep well frozen, ( get stronger tasting ).
