Hey guys,
Kids and I dug a few leeks while native brookie fishing tonight.  Was thinkin' of a little leek dip......Anyone care to share their best leek dip recipes?

Find an onion dip recipe and substitute the leeks. Google leek recipes and you should find loads of them.

1 block philly cream cheese
1 bullion cube
1 tsp worsteshire sauce
1/4 cup water
1 cup chopped leaks

Boil water, dissolve bullion cube add worsteshire.   Remove from heat mix in cream cheese and leeks.  Chill dip, eat.

1 tub whipped philly cream cheese
1 tsp red hot or tabasco
1/4 cup mayo or miracle whip
1 cup chopped leaks

Smash 1/2 of leeks in a mortar and pestal then stir in mayo,
Mix with other ingredients then serve on Melba toast.

Still have some of last years leeks that I dehydrated.
This year I bought a large dehydrator.
I should be able to dry a 5 gallon pail at the same time.
Frozen ones were gone by October.

cup of leeks , light cream cheese, 1/4 cup diced water chestnuts,dry cheese packet out of box of mac & cheese.             whip lite cream & 1/2 cheese pack together first, then mix 3/4 leeks & nuts, use 1/4 leeks to top.

1 cup leeks very finely chopped
1 cup shredded or grated Parmesan or Romano cheese
1/2 cup miracle whip-you may need more if it is dry
Thin Italian bread.

Mix all ingredients-should be as thick as peanut butter/add more mayo if it is not spreadable
Spread on bread slices the broil like you would garlic bread.






Thanks everyone. Gonna give this one a try.   Can't go wrong with a recipe from my home town!!  Makin' it tonight....can't wait.  Sounds great pghmarty!!

    The dip was great!  Also fried some up with a pan full of native brookies...very tasty!

    bugeyes, were the leeks the type that you can buy in a supermarket, or, are they some type of native leek?  I apologize for my leek ignorance, but the recipes sound good and I would like to try it.

    No problem, they are wild leeks.  They are already getting pretty big in places with this warm weather.  Alot say they get too strong when they get too large.  Millions of them growing just behind my house and on the surrounding hills down here in the southern tier.  It's a spring ritual to alot us to "harvest" them.

    Sorry if that bothers you guys.  I mean no offense by it, but we do eat the fish we catch.  This is why we fish.  We eat the walleyes, the crappies, the gills and sometimes (but not very often) the trout.  Being raised here in native country it is no different than harvesting the leeks beside the creek.  Brookies taste better to us than any hatchery dog food fed trout.  We NEVER take more than we want or need.  I teach my kids to be sportsmen, to never waste a thing from nature and to enjoy the harvest.  I have fished the same creeks for nearly 40 years and the same holes are still full of native brookies.   We eat the turkey, squirrels, rabbits, and deer we harvest.  It is our way here.  It is the way it was taught to us by our fathers, our grandfathers.  I am sorry it offends you, but it is a way of life here.

    I have no problem with it at all Bugeyes, I was just wondering what your motive would be..I only wondered though because i tought there was very little reproduction of native brook trout (like 1 fish for every 200 feet of stream)...guess i was wrong about that part though if there is enough to harvest...

    Eat away man.  I just wonder how much meat you could get off a native.  All the ones I have caught are usually pretty small.  Kinda like eatin smelt.

    Leek quiche was pretty good and I bought 2 packages of leek sausage.

    8 ounces of Philly Cream 4 ounces of Miracle Whip and a handful of leeks. Put in food processor and blend till smooth.
